What ingredients do you need for momo dough?
Momo dough can be made with all-purpose flour, water and salt. For this batch, use 250 g flour, 125–140 g water and 1/2 teaspoon fine salt. Knead until smooth, cover and rest for 30 minutes, then roll with thinner edges and a slightly thicker centre. Never taste raw dough. Keep perishable filling refrigerated and check meat-filled momos with a thermometer every batch: poultry needs 165°F (74°C), ground pork or lamb 160°F (71°C).
The wrapper has two jobs: carry the filling without tearing and close without a thick lump of dough at the top. Getting there depends on how the dough feels after mixing and resting, not on making every circle perfectly round.

What is the batch formula?

No yeast, egg or oil is needed for this particular formula. That is not a claim that all momo recipes are identical: the London Cookery School's Nepalese class notes, for example, use oil in their dough. Follow one coherent formula instead of borrowing additions from several recipes at once.
Plan on about 30 wrappers. Before salt and any dusting flour, the dough weighs 375–390 g: 250 g flour plus the water actually added. Divide the finished dough's measured weight by 30 to find your portion size. It will be around 13 g, not an exact yield promised regardless of adjustments.
How does hydration help you adjust the dough?
Hydration is water weight divided by flour weight, expressed as a percentage. King Arthur Baking's explanation uses that calculation and explains why different flours can feel different at the same percentage. Its discussion concerns bread; the maths also describes this flour-and-water mixture.
Here, 125 ÷ 250 × 100 = 50% hydration, and 140 ÷ 250 × 100 = 56%. The range gives room to adjust this batch; it is not a universal momo standard.
Keep a note of the water used. Our suggested adjustment increment is 5 g, which changes hydration by two percentage points with 250 g flour. A measured addition tells you what changed. Repeated unmeasured splashes followed by handfuls of flour do not.
How should you mix and knead it?
Stir the salt into the flour, then add the first 125 g water gradually while mixing with a sturdy spoon. Gather the damp crumbs and press them together. Scrape the bowl so dry flour is not left behind while one part becomes wetter.
Knead by pressing the dough forward with the heel of your hand, folding it back and turning it. Continue for about 8–10 minutes, looking for an even, firm surface. The clock is a guide to the work, not a reason to ignore a ball that is still cracked or uneven.
The cookery school's momo notes describe smooth dough that does not crack and advise water for dryness or flour for excess wetness. For this batch, work in reserved water in measured increments if the crumbs will not join. If it smears onto your hands, work in a small dusting of flour before judging again.
Use these observable differences:
- Dry: powder remains, or the dough breaks apart when pressed together.
- Sticky: dough leaves a wet-looking coating on the hand or rolling surface.
- Firm and cohesive: it holds together and can be pressed without falling into separate crumbs.
If you use all the reserved water and the mixture still will not join, check the flour and water measurements before continuing to adjust. A changed flour or a weighing error needs attention, not force from the rolling pin.
Why rest the dough before rolling?
Cover the ball in a bowl with a fitted lid and leave it for 30 minutes. A rest allows hydration to continue and lets worked gluten relax. After resting, press and roll one small piece. If it is smooth but keeps shrinking back, cover it and give it more time before adding water. Spring-back alone does not show that the dough is dry. Adding water to an already cohesive dough addresses a different problem.
How do you roll thin edges without weakening the centre?
Weigh the rested dough and divide it into 30 portions. Keep them covered and uncover one at a time. Flatten a portion into a small disc on a lightly floured surface.
Aim for a circle about 10 cm across. Roll around the perimeter while rotating the disc, using less pressure on the middle. Stop to check the shape with your fingers: the rim should fold readily, while the centre still supports the filling. Do not keep thinning the centre to correct an uneven edge.
King Arthur's dumpling recipe likewise instructs cooks to keep portions covered and roll the edges thinner than the centre. That is the technique being used here, not its separate boiling-water dough formula.
Our suggested check is to fill and close the first wrapper before rolling the entire batch. If the rim will not meet, reduce the filling rather than stretching a transparent patch over it. The fillings and folds guide explains the next stage.
How should you hold wrappers while you work?
Roll only the next small group you can fill. Keep the remaining dough covered, and avoid piling bare, damp wrappers together. King Arthur's shaping guide uses an inverted bowl or rimmed sheet to protect dumplings from drying during shaping. A clean cover also gives this workflow a straightforward stopping point.
Keep the rolling area separate from ready-to-eat achar. FDA warns that flour is raw food: never taste raw dough, and do not give it to children as play dough. Wash hands with soap and running water; wash flour-contaminated equipment and surfaces with warm, soapy water.
Keep perishable filling in the refrigerator, bringing out small amounts for assembly. FoodSafety.gov specifies 40°F (4°C) or below and a maximum of two hours out of refrigeration, reduced to one hour above 90°F (32°C). Those are limits, not suggested assembly times. What must happen before the wrappers are eaten?
Fill, seal and cook the momos fully using the filling recipe. A supple wrapper is a handling result, not proof of safe cooking. FoodSafety.gov's temperature chart gives 165°F (74°C) for poultry and 160°F (71°C) for ground pork or lamb. Use a thermometer every batch; check the centre of the filling in more than one momo when size or placement varies. Continue cooking and recheck if below the required temperature.
Use the steamer according to its instructions. The U.S. Fire Administration says to keep combustible items, including dish towels, away from the stove. Keep worktop covers away from burners; never suspend a loose cloth beneath a lid over the stove.
